The finished dish should fill the frame. Wide shots of a plate on a table lose everything at 168 pixels. Crop until the food is the only thing in the frame and then crop a little more.
Melt, steam, crumb, char, pull, drip. These are the cues that trigger appetite, and they are what separate a photograph of food from a thumbnail that makes someone hungry. If your shot has none of them, restage it.
Cool or neutral lighting makes food look raw and unappealing. Warm the shot even beyond what looks natural, because at small size the warmth reads as freshness.
Dark food on a dark board disappears. Light food on a white plate disappears. Pick a surface that separates the dish, which is usually the opposite tone.

Three to five at most. The thumbnail is seen at around 168 pixels wide on a phone, and longer text at that size becomes a grey smudge. If the words repeat what the image already shows, delete them and let the picture work.
